The newest on-trend gadget for making killer cocktails isn't a fancy shaker or blender. Tapping into a desire for working only with ingredients you can read on a label, and turning to whole foods whenever possible, it's a cold-press juicer.
"They preserve the nutrient value of fruits and vegetables while providing exceptional taste and texture," says Kyle Jones, head chef at Craft Wood Fire Catering in Santa Barbara. "As cold-press juicers do not use high-speed blades and heat that oxidizes the produce, they retain natural vitamins and minerals. This makes them the perfect tool for creating nutrient-rich juices."
And the resulting cold-pressed juice is a great addition to your next cocktail. "We use Fresh Victor cold-pressed-juice mixers in four of our specialty cocktails," says Kent Bearden, club manager at Tower Club Dallas. The only down side is the lack of accessories with this, but it's a basic, reliable option.

As with any appliance, consider the size you’ll need, whether it's easy to clean and use, the power sources, what features you want and storage options.
"Consider factors such as the type of motor and power rating, the quality and materials used in the construction of the juicer, the size of the feed chute and whether it has additional features such as a pureeing attachment," says Jones. "You should also ensure that the parts are easy to remove and clean."
Bruno adds, "The size of the chute is largely going to dictate how much time [you’ll spend] prepping your fruits and vegetables for feeding them into your juicer. Larger the chute, potentially the less time you have to spend on preparation."
Plus, how the juicer handles leafy greens should be a primary concern, says Joseph Tiano, executive chef at The St. Regis San Francisco in San Francisco, as greens are in many juices.
Additionally, a strainer is important to evaluate. "Some of the fine mesh strainers available in juicers are harder to reach than others," says Anna Mains, expert mixologist and brand ambassador for Monkey Shoulder, a malt whiskey. "When you’re making a ton of cocktails behind a bar, ease of cleaning makes all the difference."
While these three terms are used interchangeably, know the differences before you go shopping because your needs may lean more toward one than the other.
A slow juicer—as the name implies—slowly extracts juice by separating the fruit from its fibers. This should not be confused with a cold-press juicer, but it's very close. In fact, there are even fast juicers out there, to prove the point that these are not the same. You definitely don't want a fast juicer because of the extreme force (and resulting heat) needed to rip the fruit or vegetable from its skin.
In comparison, a masticating juicer is the closest to a cold-press juicer, although users report they can extract more juice than a centrifugal juicer, which uses fast-spinning metal blades (the opposite of slow). With cold-press juicers, more juice can be squeezed out of the fruit or vegetable than with a slow juicer or masticating juicer.
Any fruit or vegetable can be used in a juicer, providing hours of experimentation. While creating sipping juices are common, don't stop there. "Anything that is fresh with a little manipulation will be five-star," says Stellings. "And it's the cooking element that brings a new dynamic to the juicer. A slightly reduced orange juice with pulp and added Espelette [pepper], garlic and shallot are great on veggies, cooked or raw fish or even on a salad."
Tiano recommends using juice as "intense shots for energy, detox or cleanse," to add to a recipe. "Creating bases for sauce, ceviche and cocktails, the flavor of fresh juice can taste fresher and [act as] a tastier product," he says.
